Ultimate No Bake Cookies
It’s a big claim to say they’re the ultimate no-bake cookies, but these ones are beyond a regular old traditional no bake. Sometimes you need to make a good thing even better, and these do not disappoint.
Use what’s on hand
All I wanted was a cookie that wouldn’t heat my house up during the heat wave and used everything I had on hand. So, you will notice that I used packets of flavored instant oatmeal. It’s what I had on hand and actually gave some amazing flavor to the cookies. The seasoning was all clumped up together for the most part, so it was easy enough to just pull that extra seasoning out. I didn’t want the cookies to taste weird because of all the seasoning, but the little hint of maple from the maple brown sugar oatmeal packets added a good flavor.
I also used the coconut I had on hand to add a little different flavor and more texture. This addition was great and I will have to make it part of my no bake cookies from here on out. If you have a coconut hater in the house, or if you’re making them for a crowd, just eliminate it and replace with more oatmeal.
The use of crunchy peanut butter really adds a different texture to the cookies as well. My family loves the additional crunch of the peanuts, and I have been known to add extra peanuts into the mixture if I have them on hand.
Make it yours
I love taking a recipe and using what I have on hand to make it my own. Some are winners and some are just ok. We eat them and I don’t make them again. These small additions made for delicious cookies, and I want to try them with peanut butter no bake cookies next time.
When I get a whim to bake or make cookies I always start with what I have in the pantry. If I can make a cookie or dessert with what I have on hand, it’s always best. Like my snickerdoodle cookies, these just use things I tend to have in my pantry already.
